The Yatir Winery strives to produce Cabernet Sauvignon wine that embodies not only the familiar and beloved flavor of this variety but that also embodies the Yatir growing region, located at the elevated desert frontier. The grapes, from low crops and several elevated plots, are harvested in a night vintage. They are fermented and aged separately for approximately one year in small wooden barrels (225 liters).
Only a few of the barrels are new to avoid outweighing the wine’s fruit flavors and freshness. The wine is bottled and marketed after an additional aging period of two years in the bottle. Yatir Cabernet wines are rich with concentrated plum and cassis flavors which are balanced out with acidity and with measured astringency and they are lightly seasoned with Mediterranean herbs. This wine is impressive while it’s young and it ages well over a decade, through which its range of aromas and flavors gradually expand.
