Machine harvested at night when cold and immediately delivered to the winery for pressing. Chilled overnight and racked to the fermentor. Inoculated with pure yeast culture. Cold fermentation for six weeks. Racked from lees and held only in stainless steel tanks. Fined prior to bottling and sweetened (1.6% residual sugar) with grape juice.
Chenin Blanc develops a wonderful honey, ripe apple patina as it ages. As such, if one prefers the fresh, youthful aromas the wine should be enjoyed within 18 months of the vintage. If one enjoys the patina that develops with age, then the wine can age gracefully for 3-5 years if stored at 55ºF-60º. Average Harvest Brix: 20.8 TA (g/L): 6.15 pH: 3.13
