A sparkling wine. Produced from 100% Pinot Noir grapes. Made in the traditional way.
The grapes were harvested by hand from selected vineyards in the Galilee and on the south-western slopes of the Hermon.
A sparkling, crispy and dry wine with aromas of brioche and delicate fruit flavors. The grapes are harvested at the beginning of the season when the sugar level is low and the acidity is high. After squeezing, the grapes are soaked for a few hours on their skins, hence their color - a very delicate pinkish. Primary fermentation in a stainless steel tank until relatively low alcohol levels are obtained. The wine is bottled and undergoes a second fermentation for 18 months on yeast that when the bottles are placed on their side. Over the years the yeast turns the sugar into alcohol and creates a natural and gentle bubble. The process is long, complex and precise, each bottle receives dedicated and personal care. Bottled in limited quantity.
