Yatir Cabernet Sauvignon

The Yatir Cabernet Sauvignon captures both the classic character of this beloved variety and the unique terroir of the Yatir region, located on the elevated desert frontier. Grapes are harvested at night from low-yield, high-altitude vineyards, then fermented and aged separately for about one year in small oak barrels (225L), with only a limited portion being new oak to preserve freshness and fruit purity.

Following barrel maturation, the kosher wine is aged for an additional two years in bottle before release, ensuring refinement and complexity.

In the glass, Yatir Cabernet Sauvignon presents concentrated flavors of ripe plum and cassis, supported by vibrant acidity, measured tannins, and a subtle seasoning of Mediterranean herbs. Impressive in its youth, it continues to evolve beautifully for over a decade, gradually revealing layers of aroma and flavor.
